Good luck!!! I wouldn't worry about gas hob. (But you could buy an electric hotplate - I hate cooking on them.) I would be happy to abandon gas for heating would try to keep gas for cooking.
Have you considered induction hobs? Apparently even better than gas, but your pots and pans must be compatible. Never tried one though.
We need a vegan chef in the group.
I have an induction hob, it's fantastic - has the best qualities of gas and electric I would imagine the carbon footprint of replacing whatever you currently have is probably larger than any potential saving
